Kiwi Recruitment are delighted to be working in partnership with our new client located in a picturesque location within the South Downs who have a great opportunity to join the team as Head Chef.


Our client is a leading food destination within Sussex and is looking for a Head Chef to take the lead in developing beautiful food offerings using local, organic ingredients.


The role of Head Chef is to develop a highly profitable & desirable food offering, building a well-trained team of chefs, who will consistently deliver a high standard of dishes.


As Head Chef, you will create seasonal menus using local and sustainable produce which will bring to life the food experience of our clients' guests, with fresh and tantalising dishes.

You will be expected to create a clear training plan for each team memberof the kitchen brigade to allow them to develop and grow within the business.


Duties to include:


  • Have a clear vision of how to create a destination restaurant with a wonderful dining experience, and to be able to execute all aspects of the vision.
  • Create a pricing policy which enhances GPs and reflects the excellence of the food but ensures takeup and profitability.
  • Create menus that reflect the vision of the restaurant, and produce a consistently highlevel output; ensure they are in step with local demographic needs and also attract a wider audience to Petworth for a destination restaurant.
  • Staff the kitchen with the people who have the right skills, training and development to become part of a worldclass team and support the Restaurant Manager to deliver excellence every day to every customer.
  • Keep Food Safety and Hygiene as a core discipline in the kitchen; have proven experience in
- this area and a real desire to adhere to all legislative requirements.


Requirements:


  • City & Guilds diplomas in professional cookery.
  • BTEC HND in professional cookery and / or a foundation degree in culinary arts.
  • Health and safety hygiene certificates.
  • Efficient time management and organisational skills, and the ability to multitask.
  • Attention to detail.
  • Proven ability to manage budgets.
  • Passion for food.
