The Position
Join us as Head Sommelier of our fine dining, 4 AA Rosette Number One restaurant. Previous Sommelier and wine purchasing experience in a similar style restaurant or within a 5 star property is required.

Like our award winning team, you should be passionate about fine wine and creative, modern cooking that is delivered with real personality and truly world class hospitality.

Number One offers a 7 course menu of favourite Scottish and British produce, currently paired with 2 Sommelier matched wine selections.

You should be skilled in food and wine pairing and telling the story of our menu and wine list to our guests and team.

You will work closely with Head Chef Mathew Sherry, Restaurant Manager Emma Lonie and our Assistant Sommelier to lead our wine service, maintain and further develop our extensive wine and bar list.

Your success in the role will be defined by your ability to provide an unparalleled experience for our guests and diners, and support the wider team with your outstanding levels of service and knowledge.
