We are currently seeking a
Head of Food Operations to lead our team of Operation Support Chefs based across Scotland.

This is a key appointment, and as such we are seeking an exceptional individual who is passionate about food and has the ability to inspire our kitchen teams.

Responsibilities:


  • Support the business with the strategic direction for the Food Teams.
  • Support the business with the tender process and through negotiations and consolidations and driving volume achieve the best price and proposition for the business.
  • Support sites in the running of the kitchen where an immediate need has occurred, which includes running the cook line and leading busy services.
  • Required to be able to cook and deliver a multitude of different styles of cooking and train these into venue teams.
  • Provide advice and training to Area Operations Chef's and management on improving GP profitability to ensure revenue is fully maximized.
  • Assist in driving the communication of all financial targets to Area Operations Chefs and ensure they fully understand the requirements.
  • Develop strong working relationships with venue teams, while motivating, leading, and encouraging performance excellence in BOH.
  • Work closely with Area Operations Chefs and Operations Managers to effectively fill Kitchen vacancies.
  • Support Area Operations in planning the succession of their teams to minimise recruitment and develop internal talent pipeline.
  • Support with the design of new or refurbished kitchens
  • To keep up to date with professional and technical culinary developments putting forward creative ideas to benefit the business.
  • Play a key role in supporting new venues and investments to ensure maximum return in investment.

Skills and Experience:


  • Advanced food hygiene.
  • NVQ in Professional Cookery and Food Preparation.
  • Previous operational experience of large branded hospitality business.
  • Proven track record of working in multisite management.
  • Excellent knowledge of all HACCP, COSHH and Health and Safety in the workplace.
  • Ability to manage weekly reporting of wages/GP's/Cash margin.
  • Excellent coaching skills.
  • Ability to identify issues, create/source solutions and make decisions.
  • Experience of kitchen design.
