Description

We are looking to take on an enthusiastic and passionate individual to join us as an apprentice butcher at our unique walled garden.

This is an exciting opportunity to develop your skills as a baker in a small scale but busy independent bakery.


Hours: 40 hours per week. 5 day week, some weekend work. Shift patterns can be flexible and will vary, from 6am being the earliest possible start time for a shift and 10pm being the latest possible finish time for a shift.


Salary:
Up to £23,300, depending on experience

What will the apprentice be doing?_


You will be responsible for:

  • Responsibility for butchery counter at One Market, managing the day to day butchery operations and supplying meat for retail and catering use.
  • Carry out a range of primary and secondary butchery skills involving the use of steak and boning knives, hand saws, cleavers, banding needles and other relevant hand tools used in the process of primal cutting, boning, slicing, dicing, rolling, trimming and filleting as used at OGB Market and Plumpton College Butchery centre.
  • Produce meat and/or poultry products (as required) such as sausages/pies made to the specifications of customers or for sale to OGB Market customers
  • Ensuring the consistent delivery of exceptional customer service with high presentation standards that consistently exceed our customer expectations. Including advising customers on the preparation and cooking of meat products.
  • Report to the Market Manager on sales, supply and stock control. Advising on competitor analysis, market developments and local butchery trends.
  • Responsibility for safe working practices in the butchery counter, consistent with the safety policy and risks assessments, ensuring that appropriate safety standards are maintained during all activities.
  • Working proactively alongside One Garden Brighton and Plumpton College colleagues, volunteers and students to promote the brand, organisational values and our educational purpose.
  • Ensure high standards of food safety, HACCP, cleanliness and hygiene including maintaining equipment.
  • Champion the efficient use of resources to minimise the carbon footprint of One Garden Brighton.
  • Any other duties connected with the post as are reasonably required from time to time.

Training Provider:
Plumpton College

Plumpton College is a dedicated training provider in the heart of the South Downs. With expertise in the Land, Food and Environment sectors, Plumpton provides a wealth of knowledge to its apprentices.


Baking apprentices will be able to utilise our state of the art baking equipment in the new 'Agri-food' building, which features master-chef style ovens.

Qualifications Awarded:_

  • Butchery Level 2 Apprenticeship Certificate
  • Level 2 award in food safety
  • Level 2 award in health and safety
  • Level 2 award in knife skills
  • Level 1 in maths and English (if applicable)

Apprentices will learn:

  • Knife skills including cutting, boning, trimming and mincing of meat
  • Health and safety practices, food safety and hygiene and key legislation
  • Using butchery tools and machinery including mincing, sausage making, bacon curing, vacuum packing
  • Business profitability, maximising productivity, efficiency and customer care
  • Team work and customer care skills
  • Specialist retail shop or processing plant butchery skills

Essential Criteria for the role:_

  • Take responsibility for personal continuous professional development (CPD) and successful completion of the Advanced Butcher Level 3 apprenticeship.
  • Dexterous, for knife skills.
  • Passion for customer service.
  • Good interpersonal skills, a confident communicator, able to work collaboratively as part of a high performing team.
  • Excellent time management and organisational skills.
  • Able to work flexibly, with regular weekend and bank holiday working, and ensuring tasks are completed to a high standard.
