Our Ashdown Park Hotel kitchen team is expanding and we have a fantastic opportunity to join our award winning, friendly brigade as Kitchen Clerk. We are looking for a friendly, highly organised administrator who will assist the Executive Head Chef in ensuring all kitchen administrative tasks are completed, including Food Safety and Training. Experience of working within a hospitality kitchen environment will be advantageous, however full training will be given.

The Key responsibilities of the role are:

  • Using Fourth Hospitality, input rotas, manage holidays, and liaise with accounts on payroll, overtime and lieu requests. Ensure overtime authorisation forms are completed and signed by General Manager.
  • Place food orders using the company software system.
  • Keep training records up to date with Food Handlers, Allergens, FLOW, Food Audits and HACCP
  • Oversee the Back of House Department ensuring cleaning schedules are being completed
  • Liaise with Executive Head Chef on recruitment using Recruit Genie
  • Oversee Apprentices ensuring course work is up to date and liaise with the Training Officer and the college on their progress
In addition to these, other aspects of the role incorporate:

Hospitality Service

  • To provide the highest quality of guest service standards with the aim of exceeding expectations at all times

Financial Management

  • To ensure all stock is carefully managed to ensure mínimal wastage
  • To place and track orders using the company software system
  • To control goods deliveries and ensure stock is allocated to the appropriate departments

Communication, Planning and Organisation

  • To promote good working relations between other kitchen sections and with all other departments.
  • To complete any reasonable task as requested by senior staff.
  • Keep statutory training records up to date.
  • Ensure all administrative tasks are completed within the necessary time frames

Health Safety

  • To ensure that any issues are communicated to the Executive chef or appropriate personnel
  • To be aware of the need to observe the Health and Safety at Work Act regulations and take corrective action regarding any irregularities
  • To ensure that the kitchen is organised and run to the highest possible levels of safety and hygiene.
  • To ensure that you are familiar with all the fire procedures in the hotel.
  • To be aware of your obligations under the Health and Hygiene Laws and Food Safety Act.
  • To maintain a high standard of personal hygiene and appearance at all times, uniforms to be treated with the utmost of care.
  • To ensure that due diligence paperwork is completed correctly.
  • To ensure that Risk Assessments, HACCP, Food Hygiene records are kept up to date.
