1. Direct the planning of regular and modified menus, as well as the preparation of meals in accordance with corporate guidelines.
2. Attend and participate in key departmental meetings, staff development, and professional programs to streamline culinary and customer service operations.
3. Follow standardized recipes, portioning and presentation standards when delivering customer meals
4. Train, and guide kitchen staff in food preparation, operation of equipment, food safety, and sanitation based on company and local/state/federal regulatory laws.
5. Establish cleaning and maintenance schedules to assure work and storage areas were neat, tidy, well-organized, and free of rubbish.
6. Guarantee necessary products are available by ordering stock and managing inventory of food/non-food supplies.
7. Decide on the utilization of leftover food products staying within Company guidelines for such products.
8. Use daily production worksheets and waste log forms to record the number of meals cooked, tasks done, and services offered.
9. Apply customer service skills to answer questions, resolve problems, and avert escalations.
