Monday to Friday + weekend cover on rotation + events as needed

Based in the lovely village of Little Eaton just outside of Derby, Shiny Brewery have an opportunity for a brewing professional to join as a Brewer.

The site consists of a brewery + taproom where our 20hl brew house is in action 5 days a week.

We produce and pack up to 500,000 litres a year across keg, can and cask.


Duties & responsibilities

• As a team provide cover for all brewing, cellaring and packaging duties
• Assist brewery manager and brewers in supervising brewery assistants
• Support with procedural development and optimisation
• Support with recipe developing and pilot brewing projects
• Verify and record fermentation and conditioning proceeds as expected
• Verify that beers are in spec for packaging
• Ensure cleaning is performed to schedule
• Carry out hygiene work as required ensuring the brewery is kept clean
• Provide cover as a team as needed, 5 days week including bank holidays and weekends on rotation
• Ensure that the quality of beer leaving is excellent at all times
• Increase your understanding of the art and science of brewing through study, investigation and project work
• Demonstrate knowledge, enthusiasm and hospitality to visitors and clients on site and at events where you represent the brewery

Brewhouse Duties

• Operate a 20hl brewhouse
• All aspects of wort production
• Weighing out and brew preparation
• Brewhouse CIPs
• Updating stock
• Ensure correct use and storage of relevant raw materials (malt, hops, dry yeast, salts etc)

Cellar duties

• Measure tank CO2s
• Carbonating beers as required
• Ensure beer is in spec for packaging dates
• Yeast/hop dump vessels as required
• Yeast management, cropping to ensure we have yeast available for pitching
• Carry out vessel cleans (CIP)
• Follow dry hopping procedure
• Transferring beers
• Monitor fermentation, ensuring Fermentation profiles and interventions are adhered

Your skills & experience

Essential:

• We are looking for someone with brewing experience
• Understanding of the brewing process, equipment and techniques
• Confident enough to question the way things are done
• Time management skills with the ability to planahead and manage multiple tasks
• You understand the importance of accuracy in all aspects of brewing to prevent contamination and brewery health and safety issues
• Strong communication skills
• Positive and committed attitude, with a flexible approach to work hours

Desirable:

• Experience working in a craft brewery is desirable
• IBD Diploma in Brewing, Brewing msc, Food Science or Chemical Engineering degree or equivalent is desirable
• Familiar with basic laboratory equipment and methods
