Description
One Garden Brighton is a busy new tourist destination located in Stanmer Park, with over 340,000 visits in 2021.


Chef de Partie is responsible for production and presentation of food at One Kitchen, a destination restaurant, and One Market that attracts new people to visit One Garden Brighton.


Salary for role:

£25,580per annum


Reports to:
The Head Chef for One Garden Brighton


Financial responsibility:
Stock ordering and controls


Working Hours:40-hours per week annualised with flex up in summer months and flex down in winter months; with regular weekend and bank holiday working.


Hours of work will vary but are generally based around the One Garden Brighton operating and opening times of 8.00am to 6.00pm, therefore some flexibility will be required to meet the needs of the business, so this will also include some evening workingfor functions and events and whole college promotional events.

One Garden Brighton is open all year round seven days per week.


THE OPPORTUNITY


One Garden Brighton is a newly redeveloped tourist destination; a walled garden, rediscovered, reinvented, and opened to the public for the first time in spring 2021.

One Garden Brighton features expertly designed gardens; One Garden Kitchen, a place toeat and drink; One Garden Market, a retail space complete with nursery; and One Garden Events offering small and large-scale community events.

One Garden Brighton is a subsidiary of Plumpton College.

You will be integral to building this new business, shaping and influencing how the tourist destination will run.

As Chef de Partie (CDP)you will work day-to-day under the direction of our Head Chef, responsible for our commercial catering food production,operations, and chefs' team.


THE ROLE


Your role will be to support the commercial outlet One Garden Kitchen, a place to eat and drink, including developing the menus and food offer, as well as supporting our busy events programme and developing our commercial functions and events business.


You will be supported by the One Garden General Manger and the wider One Garden Brighton team, as well as Plumpton College's Head of Catering and Hospitality.

You will be a team player as part of the chef's team, apprentices, Front of House Team, volunteers and students; sharing your passion for horticulture, great food and service and leading by example.

You will be responsible for:

  • Production and presentation of food for One Kitchen, its popup food outlets, for sale in One Market, and catering for a range of public, private, and corporate events.
  • Assist the Head Chef in the day to day running of catering operations of the kitchen, ensuring food is of a consistently high standard.
  • Under the guidance of the Head Chef, prepare menu to specification sheets, recording food safety data and allergen data, and develop the menu to meet the brand vision, reflecting customer trends and seasonal produce.
  • Ensure cleaning duties are carried out and up keeping the highest food safety standards are kept, be responsible for your personal presentation and cleanliness.
  • Working closely with the front of house food and beverage operations and resolving the daytoday issues which may occur.
  • Ensuring that food and beverage operations are an integral part of the visitor experience that reflect the walled gardens and organisational values of a leading tourist destination.
  • Ensuring the consistent delivery of exceptional customer service with high presentation standards that consistently exceed our visitor expectations.
  • Working proactively alongside One Garden Brighton and Plumpton College colleagues, volunteers, and students to promote the brand, organisational values, and our educational purpose.
  • The promotion and responsibility for health & safety and food safety.
  • Champion the efficient use of resources to minimise the carbon footprint of One Garden Brighton.
  • Any other duties connected with the post as are reasonably required from time to time.

Essential criteria:


  • Skilled chef, experienced at working at a visitor attraction or a restaurant business.
  • Relevant qualifications in food hygiene and food safety.
  • Good knowledge of the Brighton food scene and trends.
  • Passion and creativity in the use of fresh local produce.
  • Previous experience of team working in a busy kitchen environment, with good interpersonal skills and a confident communicator.
  • Able to work flexibly, with regular weekend and bank holiday working, and ensuring tasks are completed to a high standard. ?
  • Good literacy, numeracy and IT skills.
