Brief Job Summary:

As head cook you will be effectively managing the catering team in order to plan prepare, cook and serve food to the highest standard.

Cooking delicious and nutritional meals for our residents using local produce, freshly sourced within Gibson House's budget, whilst maintaining a safe and clean environment.

As head cook your role is made up of many varying responsibilities including:

  • Managing, supporting and working closely with fellow cooks
  • Creating new menus ensuring variety and quality
  • Determining food inventory needs, stock and ordering.
  • Provide for special dietary requirements where necessary, and take into account the preferences of individual Clients.
  • Make sure all catering staff adhere to proper food handling, sanitation, and safety procedures; maintains temperature and Hazard Analysis Critical Control Point (HACCP) logs as required; and maintains appropriate dating, labelling, and rotation of all food items.
  • Stores leftovers according to established standards.
  • Responsible for Health and Safety in the kitchen and for staff compliance
  • Responsible for implementing new legislation and paperwork
  • Responsible for catering staff carrying out good food hygiene practices
  • Carry out 6 monthly review of cooksafe folder or sooner if necessary
  • A comprehensive knowledge of Allergens
  • Ensure kitchen staff are compliant with all training
  • Arrange / participate in Staff and Resident meetings as required.
  • To liaise with staff to support events in the home
  • Being aware of people's medical, specialist and religious and cultural backgrounds and how this might impact on their dietary requirements
  • Carrying out inductions with new staff, ensuring staff are compliant with training requirements
  • Weekly, monthly and annual audits
  • Developing action plan following EHO inspection

_The above list is not exhaustive and the head cook will be expected to cover any duties as reasonable by management_

Requirements:


  • Good communication, numeracy skills and computer Literate
  • Excellent knowledge
  • Food Hygiene certification at least level
  • Management skills
  • Ability to work unsupervised
  • Some awareness of the challenges faced by people who need care and support
