The role...
A unique opportunity has arisen at the Headland Hotel and Spa.

We are actively seeking a
Head Baker to lead our bakery in our brand-new restaurant RenMor which is scheduled to open in April following a multi million-pound investment programme.

You will also support our other two restaurants, The Terrace and The Deck.


RenMor - means 'Restaurant by the Sea in' in Cornish. With sweeping views over the Atlantic and an open kitchen where our customers will enjoy an unforgettable culinary experience.


This is an exciting opportunity to join a brand new kitchen and work alongside our Executive Head Chef, Fred Goodrich, who is widely regarded on the Cornwall food scene.

Renowned for choosing dishes that match our surroundings, he is championing the highest quality Cornish produce from land and sea that is sourced sustainably from local suppliers.

Fred's ethos is that produce is always the hero and his aim is always enjoyment through every dish created.

RenMor will be a destination restaurant with interiors that are striking, modern but ultimately warm and timeless. RenMor is the place to revel in the best, enjoy and settle in for the experience. Main Responsibilities:

As
Head Baker you
will be expected to
;

  • Lead by example with regard to service standards as required for a tworosette restaurant and above.
  • Be comfortable working under an Executive Head Chef to deliver the best possible culinary experience.
  • Possess an outstanding knowledge of ingredients, seasonality, techniques and cookery.
  • Work with your team to create a first class bakery section, preparing and presenting baked goods to the highest standard, ensuring guest expectations are exceeded with every bite.
  • Ensure that recipes are always followed accurately, controlling portion size and waste.
  • Ensure supplies are correctly issued, used and accounted for to carry out stock takes and food rotation procedures.
  • Maintain records relating to food production activities and supplier information.
  • Ensure Health and Safety and Food Safety Standards are maintained in line with company policy and statutory law.
  • Set objectives with your team and be responsible for the day to day running of the kitchen.
  • Maintain strong and effective relationships with the RenMor Restaurant Manager and their front of house team.
  • Help manage heart of house service areas to include cleanliness, hygiene, stock control and wastage.
  • Be responsible for coaching, training and mentoring the kitchen team.
  • Work alongside the Executive Head Chef, Head Chef, Restaurant Manager and teams to optimise sales and develop the business.

Are you right for us?

Our appointed Head Baker will have;

  • Previous experience in an ambitious, high volume and modern bakery section.
  • A strong background from within the hotel or restaurant sector, preferably at a 5* luxury star, 2 AA rosette and above.
  • Strong communication skills (verbal, listening, writing).
  • Exceptional organisational skills.
  • Possess a keen eye for detail.
  • Have a passion and strong knowledge of gastronomy, ingredients and seasonality.
  • An understanding of what it takes to create a 5star dining experience from both front and heart of house.
  • The determination to create a memorable culinary guest experience.
  • A desire to create a strong and positive kitchen environment.
  • Drive to work within the pressure of a high volume restaurant environment.
  • Level 3 Food Safety and Health and Safety would be an advantage.
