Job summary
The Kitchen Steward supervisor is responsible for maintaining high levels of cleanliness and organisation within a restaurant's kitchen.

We are looking for a steward supervisor who will work well within a dynamic and fast paced kitchen, handling the preparation and order of service.


SPECIFIC DUTIES


To ensure that all equipment for shift operations (including china, cutlery, pot wash and glass wash) are in compliance with all Food & Beverage policies, standards and procedures.

Supporting the Back of House managers to ensure compliance in all areas.


The following are specific responsibilities and contributions critical to the successful performance of the position. This job description sets out the current duties of the job role that may vary from time to time without changing the general character of the job or the level of responsibility entailed. Working hours may vary - as required to complete assigned tasks but normally no less than 40hrs per week.

  • Operate and maintain cleaning equipment and tools, including the dish washing machine, hand wash stations potscrubbing station, and trash compactor
  • Wash and disinfect kitchen and store room areas, tables, tools, knives and equipment using proper chemicals and products
  • Receive deliveries, store perishables properly and rotate stock
  • Ensure clean wares are stored in appropriate areas
  • Inspect, pull, and stack cleaned items, send soiled items back for rescrubbing and rewashing
  • Empty and maintain trashcans and dumpster area
  • Ensure compliance with food handling, sanitation, health and safety standards and regulations
  • Look after all equipment, china, glass and silver and ensures adequate clean supplies of each
  • Inspect food holding and transport equipment and maintains in working order
  • Operate and maintains all department equipment and reports malfunctions
  • Assist with an effective dish room equipment repair and maintenance program
  • Know and enforces proper use and cleaning of all dish room machinery
  • Know and enforces proper cleaning routines for service ware, equipment, floors, etc.
  • Enforce proper breakdown procedures for banquets, restaurants, room service and associate cafeteria
  • Ensure uniforms are properly maintained
  • Attend training for COSHH (Care of Substances Hazardous to Health)
  • Perform other related tasks as assigned by management
  • Comply with Marriott International Hotels Limited policies and procedures
  • Carry out any other duty/function that may be assigned by the immediate manager
  • Comply with Marriott International Hotels Limited Regional Office policies and procedures
