JOB DESCRIPTION

Cook


Responsible to :
Manager/Nurse-in-charge

Working Hours : 7:30am to 2pm


PURPOSE OF POSITION

  • To prepare and cook a balanced, nutritious diet within a controlled hygienic environment.
  • To control systems of food allocated to minimise wastage.
  • To operate and supervise other staff in order that all purchases are controlled within budget set by the management.
  • To ensure that the Kitchen areas are cleaned and maintained to a high standard.
  • To ensure all paperwork e,g fridge/freezer /food temp charts, cleaining schedules are completed.

RESPONSIBILITIES

  • To control stocks and purchases, in conjunction with the management, thereby allocating the quantities of material.
  • Ensure adequate stock of all foodstuff are kept and participate in ordering.
  • To keep the purchase of materials within reasonable budget guidelines.
  • To maintain a balanced diet and varied menus.
  • To be aware of the Residents dietary needs and preferences.
  • To discuss with the Nurseincharge special dietary needs and incorporate these into daily menus.
  • Participate in production of menus and review same on a regular basis.
  • To ensure that after each meal, samples of food are retained in sample pots in chilled form for the required period.
  • Ensure storage areas for food stuffs are clean and tidy and that different foods e.g. fresh food such as meat and vegetables, frozen foods and dry goods are stored in correct places and containers at the correct temperatures.
  • Ensure that all foods in fridge are dated and labelled if being kept for further use and all foods left over are covered.
  • To ensure cleaning schedules issued by the management are strictly adhered to. That cleaning methods and standard of cleanliness meets hygiene rules and regulations.
  • To assist with the duties included on the cleaning schedules issued by the management.
  • To be aware of the Health & Safety standards and of the COSHH statement.
  • To ensure that all Kitchen areas are left in clean hygienic state at the end of each shift.
  • To maintain all Kitchen equipment, as specified by the respective manufacturers and to report any malfunctions to the manager.
  • To take part in staff meetings when necessary.
  • To undergo further training or updating as required.
  • To inform and educate other Kitchen staff of any updating in legislation/requirements as and when necessary.
  • To maintain confidentiality regarding all aspects of care and management of the home.
  • Keep daily records of the fridge and freezer temperature readings and report if there is any change or fault and try to ascertain cause for problem.
  • Ensure all kitchen refuse and waste food is disposed of in correct bins for collection.
  • To perform any other such reasonable duties as may be required.

Infection control statement

All staff are responsible for protecting themselves and others against an infection risks. All staff regardless of whether clinical or not are expected to comply with current infection control policies and procedures and to report any problems with regard to this to the manager. All staff undertaking patient care activities must attend infection control training and updates as required by this organization.
