The role


As the cellar person, your focus is the smooth running of stock control, from the cellar, to bars and merchandise, and will oversee consistent and effective stock processes, including ensuring stock levels are maintained throughout the building.

Responsibilities:


  • Place stock orders using the Acquire system, ensuring levels of stock are appropriate for the requirements of the business, and adapting this to the requirements of each show through the generation of operational par levels
  • Accurately take in, store and record deliveries on any internal stocktaking systems, and pass this information and any delivery notes to Management
  • Track internal transfers and deliveries on the internal stocktaking system
  • Support the monthly external stock audit
  • Ensure all points of sale are sufficiently stocked ahead of each performance or event, liaising with Management and Supervisors to obtain relevant information for this
  • Implement and maintain a smooth process of stock rotation in the cellar and on the bars, and notifying Management if this is not being carried out on the bars, so that additional training can be provided to the bar team
  • Record and report any damaged or missing stock, and if necessary, investigate and implement new procedures to prevent a reoccurrence
  • Be present for stock deliveries, count the stock being delivered, and agree with the delivery person what has been delivered before they depart
  • Report any delivery discrepancies to Management so a credit note can be raised
  • Ensure all stock is stored safely, to prevent causing injury, and that the cellar and bar areas are kept clean and tidy at all times
  • Keep all cellars, bars, fridges and cellars secure
  • Order cleaning supplies as needed for the bars
  • Oversee the PPM of the equipment associated with the retail operation, such as fridges, freezers, ice machine, glass washer and verre de vin
  • Carry out any cleaning required
  • Work with Management to develop an appropriate cleaning regime for the staff to carry out, and flag any issues so they can be addressed
  • Train a small team of covers to deputise in your absence
  • Attend training courses as required
  • Adhere to all Health and Safety procedures, especially operating with good manual handling practice to minimise injury and accidents
  • Ensure that the Company complies with the law in respect of licensing, trading standards and weights and measures issues, as per the 'Authorisation to Sell Alcohol' paperwork
  • With the Supervisory team, update Bar Tariffs and Stock sheets in line with product changes and price amendments
  • Assist Management with any other duties throughout the shift that may be reasonably required
