Job description Are you looking to step up into a Senior Sous Chef position? Can you provide operational support to the Senior Head Chef and to deputise in their absence? You will assist in food production and delivery, menu planning and to work in all sections of the kitchenas required and to have a flexible approach to all business needs and changes.


DUTIES AND RESPONSIBILITIES:

  • To be aware of and to comply with company and legal requirements including health, safety and hygiene.
  • To ensure that departmental procedures and work instructions are implemented and maintained and that any changes are communicated effectively.
  • To monitor and maintain all hygiene and safety standards with particular emphasis on health and hygiene. To ensure all HACCP procedures are followed and continually audited.
  • To produce and deliver high quality food to our customers, in accordance with the agreed standards.
  • To ensure the Rota is effectively covered with the correct levels of team members to suit the business quantities.
  • To assist the senior head Chef by being creative, flexible and proactive in reviewing and developing new menu concepts and product standards.
  • To ensure that team members receive ongoing training & development to meet business targets and agreed personal objectives.
  • To assist the senior head Chef in costing and portion control in the production of dishes to ensure the GP is met.
  • To ensure all equipment is maintained within the kitchen and ensure control of contractor's procedure is followed for all call outs and repairs.
  • To maintain and where necessary, make suggestions to improve standards.
  • To be actively involved with looking at hospitality trends to ensure we deliver the best products within our means and in line with customer requirements.
  • To ensure all correct waste management systems are followed in allocated section, and work with the kitchen team to achieve this objective.
  • To carry out any other reasonable a task as required by the senior head Chef or a member of the management team.
  • To carry out daily communication de briefs to senior head Chef in regard to all aspects of business

£38k pa
