    Role Details

    :

    As a Head Pastry Chef/Baker, you will be responsible for overseeing all aspects of the baking operations in a bakery establishment with this high end boutique brand.

    Your role will involve leading a team of bakers and pastry chefs to create and produce high-quality bakes, viennoiserie (sweet & savoury) and pastries. You will play a key role in recipe development, production planning, and quality control to ensure that all baked goods meet this exciting boutique brand expansion. Additionally, you will be responsible for managing inventory, ordering supplies, and maintaining a clean and organised baking environment. Your leadership skills, culinary expertise, and passion for baking will be essential in driving the success of the bakery and delighting customers with delicious and innovative bakes.

    Role requirements

  • Expertise in making high-quality bakes, viennoiserie (sweet & savoury) and pastries, including pain au chocolat, scones, chocolate brownies and traditional cakes.
  • Recipe Development and Innovation: Skilled in refining recipes to meet development chef briefs.
  • Baking Techniques: Mastery of baking techniques, including mixing, kneading, proofing, shaping, and baking, to consistently produce high-quality baked goods with excellent texture, flavour, and appearance.
  • Kitchen Management: Experienced in overseeing all aspects of bakery operations, including inventory management, ordering supplies, equipment maintenance, and 3 – 4 team members scheduling to ensure efficient workflow and productivity.
  • Quality Control: Diligent in maintaining strict quality standards for all baked goods, conducting regular inspections and tastings to ensure consistency in taste, texture, and appearance.
  • Team Leadership and Training: Strong leadership skills to mentor and motivate bakery staff, providing guidance, training, and feedback to foster skill development and ensure a cohesive and productive team.
  • Food Safety: Thorough understanding of food safety regulations and best practices, including proper handling, storage, and procedures to maintain a clean and safe working environment.
  • Time Management and Organisation:
  • Efficient multitasker with the ability to prioritize tasks, manage time effectively, and meet production deadlines in a fast-paced bakery environment.
  • Adaptability and Creativity:
  • Flexibility to adapt to changing demands and challenges in the bakery industry, coupled with innovative baked goods that appeal to diverse tastes and preferences.

  • Demonstrable experience working in a similar role, with comprehensive expertise in bakery operations, recipe development, and team leadership.
  • In-depth knowledge of food safety regulations and hygiene practices to ensure compliance and maintain high standards of cleanliness.
  • Excellent organisational and time management abilities to efficiently coordinate production schedules, prioritise tasks, and meet deadlines.
  • Strong leadership skills to motivate and mentor bakery staff, fostering a collaborative and productive work environment.
  • Expertise in artisanal baking techniques, including laminated dough, and traditional pastry-making methods.
  • Working hours

    5 Days a week, Operating Openings 4am – midday.

    £40 -45 k per annum
