    Description

    Here at PRS we are looking for a passionate and experienced Head Chef to join our luxurious client specialising is Chinese cuisine. They are a global restaurant who started from humble beginnings in Taiwan.

    Head Chef (Back Kitchen)

    Location: In charge of two sites - Covent Garden & Tottenham Court Road.

    Contract: Full-time, 48 hrs per week.

    Reporting To: Group Head Chef & Managing Director.

    Salary: £60,000 – £65,000 with OTE package.

    This is an opportunity to join a globally recognisably restaurant group who are soon beginning a period of growth. We are looking for an experienced Head Chef with strong leadership qualities with the ability to optimise their kitchen team.

    Head Chef Responsibilities

    • Provide leadership to multiple kitchen teams across central London in a proactive manner that reflects the company's values
    • Long-term experience working in an eastern/Chinese kitchen is preferable but not essential
    • Maintain high standards in preparation & cooking by implementing SOP to recreate our guest's favourite dishes
    • Provide scheduling for the team in line with the labour budget and level of trade
    • Proactively manage relationships with suppliers to ensure the best ingredients is always used in our kitchens
    • Ensure the kitchen is working by compliance requirements such as Safe & Legal, Food Safety, Allergens and Health & Safety practices
    • Implement best practices for record keeping inclusive of temperature-checking (cooling, holding and storage)
    • Proactively log/raise facility issues to ensure production is not affected and that kitchen assets are maintained to the highest standard
    • Effectively use the inventory management system for order placing and processing in addition to completion of stock checks.
    • Working collaboratively with the in-house leadership team to provide on-job training to new joiners and proactively record their progress
    • Develop 2nd tier talent to support management structure
    • Provide HR support to existing and new joiners relating to ER issues, payroll & general enquiries

    Requirements

    • Ability to work in a fast-paced, demanding work environment
    • Understanding of production scheduling and labour budgets
    • Must have flexible availability working a variety of weekday and week-end shifts from morning to evening including bank holidays
    • Must be available to work throughout peak trade periods
    • Dedication to the role with learning ability that allows them to become an expert in our Food & Beverage offering
    • Possess strong communication and listening skills
    • Ability to remain composed in the face of challenges
    • Professional manner and politeness with guests
    • Financial cost controlling and budget reporting
    • Professional appearance
    • Demonstrate correct practises in hygiene, food hygiene and health and safety requirements
