Each dish is crafted with unfussy elegance with a strong emphasis on UK producers and fresh fish.The Role - Senior Sous Chef We have a fantastic opportunity for a Senior Sous Chef for our Italian Walled Garden at The Roof Gardens, this position would suit a Senior Sous Chef/Head Chef level looking for their next big step or for an exciting new challenge.
Experience with events is an advantage also.You will be leading a small brigade of chefs as part of the culinary team and developing new and exciting dishes for our various events spaces and our stunning seasonal Spanish Garden.
Menus will include various banquette, canapes and party style events as well as taking responsibility for the Levantine style food in our Summer Spanish Garden.

Your main responsibilities will include:
Controlling and directing the food preparation process
Creating accurate recipes, menus and costings
Working with procurement systems from food ordering and T&A monitoring
Delivering food to the expected high standards of the business within set times frames
Managing your team and working closely with Chefs of all levels
Determining food inventory needs, stocking and ordering
Overall responsibility for daily operations in the kitchen
Liaising with purchasing companies for food orders
Maintaining or raising the profit margins on food
Maintain the budgeted food cost and actively seeking ways to improve profitability
Accurate scheduling of your team to reflect business levels and to ensure you are working within budget
Producing menus, concepts and new dishes relevant to your area
Training and managing your team in line with the companies expected culture
Ultimately responsible for ensuring the kitchen meets all regulations including sanitary and food safety guidelines
Responsible for maintaining expected health and safety standard in line with statutory and Company standards
Responsible for maintaining expected food hygiene practices in line with statutory and Company standard
The skills and experience which will help you succeed in this role
NVQ Level 3 or Degree in Culinary Arts
Level 2 Food safety
Level 2 Health and Safety in the Workplace Award
Minimum 2 years relevant experience at Sous chef level or higher
Awareness of manual handling techniques
Awareness of Control of Substances Hazardous to Health Regulations (COSHH) and chemical safety
Competent level of English spoken and written
Excellent knowledge of all sections
Ability to produce excellent high-quality food
Team player & management skills
High level of attention to detail
Good level of numeracy
Enthusiasm to develop your own skills and knowledge plus those around you
Adaptability to change and willingness to embrace new ideas and processes
Ability to work unsupervised and deliver quality work
Positive and approachable manner
