    Description

    Key responsibilities and accountabilities

    • To plan, prepare, cook, and present food to meet the standards demanded by the Trust for a facility with an expected income of £430k
    • To ensure the organization's reputation for exceptional food and service is maximized and enhanced through offering a locally sourced and seasonal menu
    • To create retail and function menus with creativity and style within budget constraints and GP control
    • To manage supplies correctly, track usage, and conduct stock takes and food rotation procedures
    • To keep records related to food production activities and supplier details as needed by the Visitor Service Manager - Food & Beverage
    • To uphold Health and Safety and Food Safety Standards following company policies
    • To set goals and oversee daily kitchen operations, cleaning schedules, allergens, dietary requirements assignment, and menu enhancements
    • To assist in evaluating employee performance, identifying training needs, and potential development opportunities
    • To participate in team briefings regularly to communicate food quality standards, menu updates, changes, and H&S Policy guidelines
    • To ensure the venue achieves, at a minimum, the financial targets mutually agreed upon, aligned with the budget

    Visitor Experience:

    • To prioritize customer satisfaction consistently and provide prompt and efficient service, being approachable, and surpassing customer expectations
    • To guarantee all food is cooked, presented, and served according to Trust standards with innovative presentation techniques and service style
    • To host hospitality events at Crathes Castle, Garden & Estate and other NTS properties following Trust policy and procedures

    Health & Safety, Food Safety, the Environment:

    • To ensure the venue complies with Health and Safety, Food Safety, and Environmental regulations and company standards
    • To carry out Food Safety and Health and Safety Risk Assessments, ensuring hygiene and safety standards are maintained per the Trust manual
    • To ensure all kitchen staff and high-risk food handlers receive appropriate training
    • To maintain all equipment in good working condition and recommend replacements when necessary
    • To establish and manage location cleaning schedules
    • To ensure thorough understanding and practice of all Trust procedures and work instructions by all staff
    • To attend mandatory health and safety training sessions
    • To advocate for and support environmental improvement initiatives within the business
    • To document and report all incidents at the venue following location and company protocols
