    Job title: Process Validation Lead – Interim

    Responsible to: Innovation & Sustainability Director

    Location: New Moon (Kettering)

    Hours: 5 days a week / 9 month contract ending Feb 2025

    Little Moons are frozen and chilled mochi, a fusion of Eastern and Western cuisine – soft and chewy rice flour dough wrapped around balls of ice cream, cheesecake, or chocolate ganache to create a distinctive, bite-sized, and delicious dessert that's bursting with flavour.

    Their rollout across Europe has been pioneered by sister and brother duo Vivien and Howard Wong, who founded Little Moons in 2010. The product's roots are in high-end restaurants, but over the last five years retail packs have swept the ice cream category in grocery and food service.

    Little Moons has rapidly established mochi, and snacking ice cream, across Europe. In 2023 we generated more than £60m revenue, and in 2024 we continue to drive towards double digit growth.

    The role

    We are looking for a dynamic and experienced Process Validation Lead to support us in the launch of our new manufacturing site in Kettering. The perfect candidate will be an authority on transferring manufacturing processes to new sites whilst maintaining consistent product quality. They will have a hands-on approach, obsessed with understanding the detail of a process, learning from those who make the products every day whilst applying science to validate theory. This role will work with a core process group and cross-functional commissioning team, utilising their expertise and findings to direct commissioning activity and ultimately validate the new manufacturing processes to launch our new site with excellence

    Key Responsibilities

    • Manage the product and process validation workstream for the product portfolio transfer from one manufacturing site to another, delivering against the defined brand and business requirements.
    • Provide technical product and process expertise for the project; understand the science behind the product, the critical process parameters in its manufacture and how these influence key product attributes.
    • Project manage and execute (through a team of Technologists) commissioning and validation, issuing protocols, managing activity on the shop floor and leading post-trial assessments.
    • Troubleshoot issues highlighted during commissioning, working closely with Operations and Engineering teams to find solutions.
    • Provide regular communications on project progress to the project team and key stakeholders.
    • Input KPI data and present daily commissioning meetings progress of plan and validation.
    • Handover product and process validation to the site team and support Technical on factory specification and Quality Standards documentation creation.
    • Ensure completion of validation testing and paperwork for future audit compliance.
    • Design, execute and evaluate the product data collection for knowledge transfer of remaining product lines. To include process mapping of current equipment / processes, and the scientific analysis of ingredients, intermediaries, and finished products.

    Essential requirements:

    • Lead process development experience in a food manufacturing environment
    • Experience of commissioning a large capital plant
    • Experience of working with ice cream, general dairy and/or fresh desserts including dough / pastry is preferable
    • Experienced process interim that has led process teams
    • Good leader, planner and organizer of complex activity
    • Bachelor's degree, preferably in food science, technology or engineering
    • Knowledge of equipment qualification and design verification
    • A science and data led approach
    • High level of statistical analysis capability
    • Proven project management skills
    • Solution focused
    • Understanding of HACCP and site technical standards
