The dnata Catering and Retail division is renowned for providing top-notch in-flight hospitality services, enhancing the overall passenger experience with exceptional culinary offerings.

    What's the purpose of role:

    The Indian Sous Chef role is centered at Heston and specializes in regional Indian Cuisine, ensuring the culinary standards for airline customers are consistently met through menu development and implementation. This role also focuses on equipping our operational kitchens to deliver these standards effectively.

    Who you'll deal with:

    Internal stakeholders: National Accounts Executive Chef, Food Technologist, chefs, unit personnel, central support functions, QA, Compliance

    External stakeholders: Airline customers, apprentices, EHO, Auditors

    What you'll be doing:

    • Develop regional Indian dishes and products aligned with customer requirements and business strategy
    • Simplify kitchen/production concepts for production chefs
    • Conduct informative sessions for unit Chefs on new menus and production methods
    • Assist in integrating regional Indian dishes into regular production
    • Continuously enhance regional Indian recipes and production processes
    • Collaborate with customers and sales team to fully understand their needs
    • Prepare and deliver engaging presentations on Regional Indian cuisine to Customers
    • Guide the commercial team in refining menu specifications for accuracy
    • Create plating guides for effective presentation
    • Promote regional Indian food trends across the business
    • Ensure cost control within financial guidelines and oversee working practices to meet schedules
    • Effectively communicate recipes and respond to production implications of new customer specifications
    • Develop core product range to offer different quality levels in each category
    • Ensure raw product quality meets expectations and suppliers are informed of requirements

    This is not an exhaustive list of responsibilities and may entail additional duties as assigned by the line manager.

    What you'll have:

    • Professional culinary qualifications e.g. 706/1, 706/2 & 706/3 or equivalent
    • Prior experience in Indian product development within a manufacturing setting is a must
    • Diverse culinary experience including fine dining is essential
    • Strong interpersonal skills for building lasting business relationships
    • Confidence in group presentations and leadership
    • Excellent product presentation abilities
    • Enthusiasm and a proactive approach to meet deadlines
    • Solid understanding of food values, quality, and chemical balances in foods
    • Flexibility to adapt to customer needs within company constraints
    • Ability to work varied hours and locations as needed
    • Effective relationship building with internal and external stakeholders
    • Stay updated on Indian food trends through various channels
    • Integrate modern restaurant concepts and kitchen technology into traditional catering operations
