- Restaurant Manager at the Walnut Tree is responsible for working alongside the Head Chef to manage all aspects of the daily running of the versatile front of house and kitchen teams.
- To manage, develop and monitor the day to day business, procedures and operational strategies. This includes reservations, stock, facilities, training, communication, reporting and innovating.
- The Restaurant Manager must lead by example and deliver exceptional hospitality at all times and ensure our guests consistently receive the best experience.
- Be calm and collected in times of pressure
- Be willing to learn from other members of the team as well as impart knowledge of their own

The Walnut Tree is a 60 cover Michelin-starred restaurant located just outside the Market town of Abergavenny, South Wales, UK. It is part of the House of Caradog, a family of businesses based in and around Abergavenny who believe in delivering outstanding hospitality. We share a passion for providing a wide range of exceptional and interesting products throughout our properties, so that all our guests enjoy an exclusive, personalised experience each time they visit. The Walnut Tree has been known as a food-lovers destination since the early 1960s. Shaun Hill arrived in 2008 to begin a new era for the restaurant. After nearly 50 years in the kitchen, Shaun Hill is still found in the kitchen every day creating the sort of food he likes to eat himself with a deep knowledge of culinary techniques and showcasing excellent seasonal and local ingredients. In 2019 Shaun received a Lifetime Achievement Award at the Cateys.
The Michelin Guide describes The Walnut Tree as "an iconic restaurant with an illustrious past. Its location in the rolling borderlands of Wales makes it a destination kind of a place and its loyal band of regulars is testament to the quality of the cooking. The owners run it with heart and soul and, with its cosy open-fired bar and dining room hung with colourful art, it's hard not love it too."
The restaurant is open Wednesday - Saturday every week for lunch and dinner service.
