    Head Chef

    Permanent

    7 am – 3 pm (Monday – Friday)

    35 hours per week, £25,007 pro rata per annum

    The successful applicant will be responsible for planning, preparing and cooking cost effective nutritious meals distributed to Age UK Sunderland's clients while maintaining the highest standards of food hygiene, cleanliness of self, equipment and kitchen areas.

    Applicants must be able to demonstrate experience of providing meals for older people with knowledge of budgeting, stock control and understanding of safe meal transportation.

    Applicants must possess a qualification in NVQ3 Food Preparation and Cooking, HNC in Catering or, if evidence can be provided of experience gained through working in commercial kitchens.

    All applicants must have an up to date food hygiene certificate and experience working with the Safer Food Better Business food safety management system

    Job Description

    Post: Head Chef

    Responsible to: Front Door Manager

    Location: Bradbury Centre, Sunderland

    Job Purpose

    To plan, prepare and cook cost effective traditional and nutritious meals. To manage portion control and timely distribution of meals to AUKS's clients. To robustly manage stock control and ordering of provisions. To maintain the highest standards of food hygiene, and cleanliness of self, equipment and kitchen areas. The post holder will be based at our Bradbury Centre. The post includes responsibility for other catering requirements as and when appropriate.

    • To plan menus.
    • To produce recipes, including nutritional values and allergen sheets for all meals produced.
    • To prepare and produce a variety of traditional meals for older people
    • To effectively order food ingredients as required.
    • To effectively maintain food costs within budget constraints.
    • To keep a stock check of all goods ensuring there is sufficient food stock at all times and minimise waste.
    • To be responsible for the safe storage of food.
    • To be responsible for quality and portion control.
    • To maintain the kitchen environment and equipment in safe and hygienic working condition.
    • To keep up to date with and implement all food hygiene regulations.
    • To work with and support kitchen assistants staff/volunteers
    • To liaise with staff volunteers about food standards and menus.
    • To liaise with AUKS staff concerning the timetable for the transportation of meals to venues in the community.
    • To ensure compliance with GDPR requirements.
    • To ensure adherence to AUKS safeguarding procedures.
    • To abide by and implement all policies and procedures of Age UK Sunderland, including being aware of and being responsible corporately and as an individual for Health & Safety policy.
    • To undertake all reasonable tasks, in keeping with the level of responsibility of the post, as requested by the Chief Executive Officer

    Person Specification

    Essential Criteria

    • Qualifications in NVQ3 Food Preparation and Cooking, HNC in Catering: or, if evidence can be provided of experience gained through working in commercial kitchens.
    • Experience in providing meals for older people.
    • Understanding of the safe food storage and packing of meals.
    • Be a self-starter with the enthusiasm and flair to achieve positive results.
    • Experience of working with and supervising staff volunteers.
    • Knowledge and understanding of safe meal transportation.
    • Knowledge of budgeting and stock control.
    • Ability to work on own initiative.
    • Ability to run and manage a kitchen.
    • Experience using the 'Safer Food Better Business' food safety management system.
    • A comprehensive understanding of allergens.
    • Ability to provide an agreed number of meals at a set time.
    • Experience of meal planning and provision on a commercial scale.
    • An understanding of the dietary needs of older people.
    • A Level 3 Food Hygiene qualification.
    • Ability to quickly form good relationships both internally and externally and represent the organisation in a positive manner.
    • Ability to listen to others to assess requirements in order to respond appropriately and efficiently.
    • Ability to manage workload and plan effectively to ensure seamless meal production.
    • A flexible approach to work.
