Who are we: Pentonbridge inn is a fine dining restaurant with rooms located just outside Carlisle in Cumbria, on the Border of Scotland.
We have 9 beautiful en-suite guest rooms and a 30 cover restaurant, which boasts 1 Michelin star and 3 AA rosettes. Our dining room is open Wednesday to Saturday for 4 dinners and 2 lunches. We source the highest quality produce from around the U.K as well as growing vegetables and herbs in the garden of our sister property, Netherby Hall. We offer a 4 or 8 course tasting menu which changes throughout the year based on the seasons.
The position: A fantastic opportunity to join an established team as sous chef, to help push the restaurant to further success. We are seeking a mature, experienced and skilled chef, with a great eye for detail and man management abilities.
As sous chef you will work closely with the head chef to maintain and improve standards throughout the kitchen, managing the small team and be 'a hands on presence'.
Your responsibilities include taking care of ordering and GP targets, menu development for special events/small functions, and implementing new procedures, checks and balances to improve the operational efficiency of the kitchen.
Key responsibilities:
·Assist head chef in menu development
·Help in day to day running of kitchen
·Maintain and improve highest food preparation standards
·Management of junior kitchen members whilst maintaining a happy working environment
·Monitor ordering and maintain GP targets whilst using only the best produce
·Ensure the kitchen is clean and organised at all times
Role requirements:
·Proven track record in Michelin and AA rosette level kitchens
·Solid C.V, showing longevity in roles
·Senior level experience
·Man management skills
·A Can do attitude and positive personality
·Solid cooking foundations, with a creative mind
·A passion for excellence
What we offer:
·A competitive salary of £38-£40,000/year
·Equal share of service charge
·40 hour/week (any overtime paid)
·3 days off/week
·Private health care
·Live in accommodation (2 months max for this role)
