    Description

    We have built up a fantastic roster of long standing and high profile clients and collaborators, predominantly in the art, fashion, design and film industries. Besides our seasonal menus, a lot of client commissions are bespoke projects. We believe creative flair must be underpinned by methodical rigour and are looking for someone passionate about food culture with good culinary knowledge and experience.

    Job Description:


    • Food and drink preparation: Support the Head Chef and Sous Chef with the effective preparation and development of food and drink. Execute busy services of up to 200 pax daily across multiple days and clients. In close collaboration with the Head Chef and Sous Chef, regularly review the taste, smell, texture, presentation and cleanliness of all food and drink. Follow menus, methods and specifications as directed by the Head Chef and Sous Chef. All recipes must be accurately recorded and passed on to the Sous Chef, Head Chef or Executive Chef.

    • Storage: Support the Head Chef and Sous Chef with stock level, rotation and mise en place. All food and drink to be correctly stored and labelled, and other storage requirements in keeping with health and safety guidelines

    • Receipt of deliveries, goods quality, quantity and weight check, cost check and record temperature when required. Report any issues immediately to the Head or Sous Chef.

    • Health & Safety: Ensure FSO guidelines are rigorously followed by all team members throughout the entire food preparation process and storage, both on and off site. Please report to head and sous any equipment damage, missing equipment or pest activity. Ensure all daily HACCP tasks are executed as outlined on the TRAIL APP.

    • Staff management: Support the Head and Sous Chef with the everyday kitchen management of freelance staff. All team members should finish their daily work to a high standard within a set time frame.

    Job Requirements:


    • 3-4 years of experience in well respected restaurants or catering companies with excellent references.

    • Proven ability to lead and inspire a team to deliver exceptional results.

    • Deep understanding of food operations, sourcing, and cost management.

    • Strong grasp of hygiene regulations and best practices.

    • Excellent communication skills and a proactive, problem-solving mindset.

    • Physical stamina to handle the demands of a busy kitchen environment.
