- Ensuring that all food items and products are stored, prepared and served based on the restaurant's recipe, preparation and portion standards
- Ordering kitchen materials and ingredients based on the menu and market demand
- Supervising food preparation in the kitchen and ensuring that customers are satisfied
- Maintaining clean working environments and making sure that employees follow the restaurant's preventive maintenance measures
- Ensure compliance with all local authorities and Allergen laws and maintain licencing laws
- Maintaining adequate inventory levels and conducting weekly inventories
- Working with the General Managers to create menu items, pricing and establishing portion sizes of each meal
- Weekly/ monthly forecasting, budget building for F&B
- Overseeing the training of employees to ensure the safe operation of kitchen and bar equipment and utensils and the proper handling of heavy items and hazardous materials.
- Meeting sales and profitability targets
- Creating a welcoming environment for customers
- Ensuring consistent, high quality dishes are served to customers
- Dealing with customer feedback and providing adequate solutions to customer complaints
- Creating a positive work environment for staff and encouraging their career development
- Monitoring inventory of beverages to ensure adequate stock
- Overseeing the cleanliness of staff and the physical bar area and paying attention to possible health hazards and regulation violations
- Previous experience in a Kitchen Manager role
- Certified Level 3 Food Hygiene holder desirable
- Experience in hotel kitchen operations, with specific experience delivering Breakfast and Events
- Exceptional people manager, who leads by example, and is passionate about developing people.
- Strong desire to drive efficiencies through adoption of technical systems
- Ability to ensure adherence to all relevant health, safety, and hygiene standards
- Ability to complete food hygiene and environmental health report
- Previous experience in ordering and overseeing daily kitchen inventory including the use of procurement, EPOS and other operational IT systems
- Previous experience in managing food and labour cost with a focus on delivering profitability whilst ensuring high quality and value to our guests
- Sustainable and creative mindset when it comes to cooking and food handling
- Great command of English – verbally and written
