    Discovery Land Company is a US-based developer and operator of private residential club communities with a world-renowned portfolio of domestic and international properties.

    Taymouth Castle Golf and Sport Club is Discovery Land's second European private members-only golf & sport community. Nestled between two national parks and at the head of Loch Tay in Kenmore, Perthshire, the club incorporates several land estates and is rich in history with dramatic views and the offer of endless adventures.

    This private lifestyle-driven community will offer 125 residences, a world-class golf course and practice facility, wellness and recreation facilities, a range of outdoor pursuits as well as a refurbished 19 th century castle to offer a clubhouse with a range of food & beverage outlets and indoor activities when fully established. The Club also offers additional facilities at Glenlyon, a nearby farm and mountain estate. Taymouth Castle will offer a membership that values its relationships, its health, its leisure time, and is a modern community that honours Scotland's strong legacy of history, outdoor adventure and, most importantly, fun.

    The first phase of the castle is due to open late spring/summer which will be an exciting time. We are looking to add to our culinary management team with the addition of a Sous Chef who is responsible for driving the brigade in the creation of exquisite dishes, that not only taste fantastic but are visually stunning, matching the creative range of food styles to suit each environment of the club.

    With our members and their guests at the heart of everything we produce, our formidable team are a creative bunch hugely talented in their field. Carefully preparing a fine range of mouth-watering dishes at a variety of locations. From the Castles sumptuous and delicious afternoon teas served within our Chinese Drawing Room. Or comforting favourites at the Tavern, to baronial style feasting in the Baron's Hall to the magnificent views and atmosphere of the Glenlyon estate and the Lairds Hall. The Outdoor Kitchen at the Grouse House to our Wild Kitchen located on the banks of the River Tay. Each experience utterly unique, creating a distinctive Scottish experience.

    Leading a strong brigade of chefs you work with the Head chef in developing exciting and creative menu choices ensuring that when it is time for our members and their guests to dine, whatever the occasion, it is beautifully presented and reflecting a mouth-watering visual appeal.

    Incorporating seasonal ingredients and innovative techniques; home grown from the farm, gardens, and hills around our estate, using our bounty of natural and organic produce in creating the finest dishes.

    Our menus are engineered to make the best of the finest ingredients Scotland's incredible natural larder has to offer. Grown and foraged produce from Taymouth and Glenlyon estates play an ever-meaningful role in maintaining a truly seasonal and sustainable approach.

    Leading this close-nit brigade of chefs in ensuring that each item prepared follows a well thought out and crafted recipe. Continually creating and sharing ideas with the team, supporting with their individual training and development, and allowing and encouraging participation with ideas and suggestions of new menu ideas.

    Coordinating and overseeing all activities related to food preparation, regularly check food items and stock to ensure consistency and freshness, addressing any food compliance issues. Keeping up to date and informed on relevant regulations and industry standards to ensure the culinary team operates to the highest standard.

From the first meal of the day, breakfast, through to the final course at supper; with a world of experiences available where no two days will be the same, you have the freedom to do your best work.
